Chicken, tomato & pesto pasta

Ingredients

Pasta
-
Sliced chicken breast (cheaper alternative: precook thighs/legs and tear meat off the bone then add at the end to heat through)

Onion
-
Peppers
-
Fresh tomatoes
-
Chicken stock cube
-
Pesto
-
Tbsp of tomato pasta sauce (can use the rest for tomorrow's dinner :)

Generous tbsp of crème fraiche
P.S. Just as tasty without the chicken if you're not a meat eater (or simply if you're a student and the budget won't allow for it!)
Method
1. Cook pasta in salted water
2. Meanwhile fry onions until soft, then add chicken
3. Cook for a couple of mins then add rest of veggies and fry until the chicken is cooked through.
4. Dissolve the stock cube in a little boiling water, then stir it into the chicken with the crème fraiche and tomato sauce, then a spoon of pesto.
5. Add sauce into the pasta and eat! Yum!
Tip: You can add bacon, chorizo, mushrooms, olives, more veggies, or Parmesan on top... What's great about this recipe is that you can shove in whatever you've got!
Blueberry Bliss

Ingredients
1/2 cup frozen blueberries (unthawed) 1/2 cup low-fat vanilla yogurt 1/2 cup 1% skim or 1% milk 2 tablespoons honey 2-3 ice cubes (optional)
- Combine all the ingredients together in a blender and blend until smooth and pour into a glass
Instead of chocolate cookies, why not replace a healthier biscuit option that is low in fat and naturally sweetened.
Amazing Apple Oatmeal Cookies
Ingredients
100g butter, softened 175g honey 1 egg 1 teaspoon vanilla extract 90g stoneground wholemeal flour 1/2 teaspoon bicarbonate of soda 3/4 teaspoon ground cinnamon 125g porridge oats 1 apple, corred and chopped
1. Preheat the oven to 190 C / Gas mark 5. Grease baking trays, or line with baking parchment. 2. In a large bowl, cream together the butter, honey, egg and vanilla until smooth. 3. Combine the wholemeal flour, bicarbonate of soda and cinnamon; stir into the creamed mixture. Mix in oats and apple. Drop by teaspoonfuls onto the prepared baking trays. 4. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool.
Chocolate-dipped Biscuits
What you need: A lot of biscuits and some chocolate
Directions Melt the chocolate by putting some water about an inch and a half deep in a large saucepan. Put a small saucepan inside the large saucepan on top of the water. Boil the water and put the chocolate in the small saucepan. Stir it while it melts. When the chocolate is melted, dunk the biscuit into the chocolate and eat!
Ice Cream Surprise
What You Need: Chocolate cupcake or brownie, vanilla ice cream, crushed oreo, chocolate syrup (optional), chocolate kisses (optional), stick-o (optional)
Directions 1. Get a wine glass, bowl, or coffee cup and squeeze chocolate syrup in the bottom. 2. Carefully place the brownie or chocolate cupcake on top of the syrup. 3. Top with 2 scoops of vanilla ice cream. 4. Decorate! Place the kisses in the middle of the ice cream and make swirls with the chocolate syrup. 5. Sprinkle the oreo crumbs on top and place 2 stick-o's in it
Cookies and Cream Milkshake
What You Need: 6 Oreo cookies, whipped cream, milk, vanilla ice cream
Directions First, you get a blender then you smash the Oreo cookies. Then put 2 cups of whip cream in the blender. Add 1/4 cup of milk then you add ice cream how ever much you want, then blend it up. Add cherries if you want and enjoy!
Snack Pizza
What You Need: English muffins, pizza sauce, pizza toppings of your choice
Directions: Preheat oven at 375 degrees. Cover english muffin and biscuit with sauce. Then sparingly spread choice topping on both. Grease cookie sheet. Put on muffin on cookie sheet. Bake 7-10 minutes or until light brown colored. Serve warm. Many can be made at once! Enjoy!
Sugar Cookies
Yum, Sugar cookies. Bake them 12 minutes for crispy or 7 minutes for soft!
Ingredients:
* 1 1/2 cup flour * 1/2 cup sugar * 1/2 cup apple sauce * 1/2 cup oil * 1 tbsp vanilla * Cinnamon sugar sprinkles
Directions:
1. Preheat oven to 375°. 2. Mix the dry ingredients in a bowl. 3. Add all other ingredients and mix well. 4. Drop the cookies by tablespoon onto ungreased cookie sheet and sprinkle with cinnamin sugar. 5. Flatten cookies a little with a fork. 6. Bake for 7 (soft cookies) or 11 (hard cookies) minutes!
